Blueberry fool

Hello! Quick post today. Sharing with you a recipe I developed that's in the current issue of the wonderful magazine I work for, All You. If you've never had a fool (insert joke about your worst ex-boyfriend here), you're in for a treat. It's really the easiest, yet most luscious dessert, like a mousse but soooo much easier. All you do is cook some fruit gently with a bit of sugar and maybe some cornstarch until it's sweet and thickened but still essentially the same fruit, let it cool, and fold it into some gently whipped cream until you end up with a streaky, delicious, fruity little cloud of deliciousness.

Beth, I've been away for so long....I've even ignored my own blog quite a bit the last few months. I love this recipe and every time I get my issue of All You I think of YOU! Blueberries are my favorite choice of fruit and I know I would gobble this up...and Grumpy would be the fool because most likely he would let me eat it all (he's still oh so picky!) :)
